hi,

after i unwrap my model with symmetry and then collapse symmetry and delete the joining seam then will it affect the UV's or how will they react. this is to save some extra polys on my models.

If the UVs aren't stacked, it will be ok. If the UVs overlap, then the middle will be squashed. You can save texture space by unstacking just the row of polies on either side of the seam before killing it.
