whenever i hit a to convert my zspheres into a mesh, the first zsphere is missing one of its hemispheres in the mesh. is this normal?

for example if i just create one zsphere then preview it as a mesh, the preview is just half of a sphere as if someone selected the other half and deleted the polys

Yes that is how they work. You have to create a zsphere (child) on each side of the parent.
