If you mean the Object Center then in F9 buttons, Mesh tab, use one of the 3 Center buttons
If you mean Rot/Scale pivots then use the Second Icon in the 3D Header bar

just to clarify, the rot/scale pivot is normally referred to as the 3d cursor in blender tutorials and documentation.
to move the 3d cursor one has a few options, either left click in the 3d viewport or use the snap menu to snap the cursor to the center or to a selection.
as fligh says, there is a little drop down menu in the 3d window header (usually at the bottom of the 3d viewport) that will allow you to tell blender if you want to use the 3d cursor as a pivot point in rotation/scaling operations.
If you want to recenter the object center choose the button labelled 'centre new' in the edit buttons.

I was just wondering that same thing myself, and found it thanks to the replies here.
You can't move the pivot of an object in itself. However you can put it in the center of the object, or snap it to the 3dcursor with the button "centre cursor."
A bit akward, but it works.
I wonder, if all these great snapping ideas get through, how much use the 3d cursor eventually will be...
