grass in game how they do it?

im working at a newb company in guangzhou china, i need help make grass for game.
have you played metal gear solid 3? or tiger woods golf?
in the two games, how do they make the grass so real? and 360 degrees?

please help

I guess they used sprites, just like most games do.
