When creating specular and bump maps, what base-level of grey should I use? There's 255 shades of grey isn't there? So would it be smart to flood my map with a grey level of 122 and work from there?

Different 3d software treats this in different ways (gray for base or black), what software are you using?

There are 256 shades of grey (0 to 255), so in general, your midcolor should be 128, with white being bumped out and black being bumped in. But yes, some 3d software doesn't follow that convention, so it is somewhat software dependent, but in general I think the 128 grey level is pretty standard in the industry.

I play with maya. She's fun.

How about the spec maps? Should we start from black and work there?

Also maya here.

Sure, that's the way I usually see it happen, since if you started from grey by default everything would be 50% shiny.
