Is it possible to "cut" a piece of "cloth" using clothfx? U know, to split the poly with a collision object?

look at newtek site there is a video showing how to do it with the "sewing" tool.

I think that video is on one of your LW8 content discs. The answer however, is yes (http://www.carm3d.net/Carm3DTearOpen.MP4).
