If you can't find any tutorial on low-poly horse you have to learn it for yourself, I'm afraid, but don't worry, it doesn't hurt.
No, I won't send you a tutorial about horses because I don't know any and I neither have the time nor the intention to write one.
Get some pictures of horses and start to learn how to model. I gave you some links concerning the modeling. Forget about the shark, have an eye on the technique and adapt it to a horse, it isn't that hard.

What's wrong with fish?

nothing that much trouble

But I thing fish and horse motion will be far more different ,being fish for water and horse for land.
To model a horse is not that much troublesome but to animate it correctly , I think is something kind of concentrating .

Any help:wise:

Of course there is a difference between a horse and a fish, but as said, the tutorial isn't about the fish, it ist about how to model a low poly fish.
