If you have geometry (ie. a sphere) you want to hide, take a look in its attribute editor render stats and turn off "primary visibility."

Hi to render a with a HDRI and compose in ps, like you wanted it would be better to use an IBL (maya 6 and up) node (manual states it's more efficient way) there's also a primary visibility property to hide the IBL sphere (just like on the shape node of an object as mr Birn wrote above).
