I'm writing this on a box running Windows XP Professional x64 Edition with Maya 7 Complete installed. Works just fine. If you do a "winver" in XP-x64 you'll see that it's actually based on the Windows 2003 Server code line.
The only thing I think your friend might be refering to is that if you do choose to install Maya on a Server OS then you'll need to whip round and enable hardware DirectX and a few other settings (you'll need to do this regardless of whether you choose x64 or legacy 32 bit). There are lots of documents on the net that tell you how to turn 'Server 2003 into 'Profesional 2003 (sic). To be honest now that the 64 bit version of XP picks up all the kernel goodness from the server line there's little point in this kind of monkeying around. If you want to do the x64 thing (and why wouldn't you :-) I'd use Windows XP Professional x64 Edition as your platform.
If you're dead set on using Windows Server 2003 (x64 Edition or the old 32 bit version) as a workstation you'll need to:
1. Turn on full hardware DirectX video acceleration.
2. Turn on full hardware DirectX sound acceleration.
3. Change the performance settings to favour foreground (interactive) applications.
4. Turn off the bloody anoying Shutdown Event Tracker (you can do this in the Group Policy Editor MMC).
5. Turn off the extra IE security (you can do this in the Add Remove/Programs -> Windows Components dialog).
That's about it really. Like I said, I'd strongly suggest you go with XP-x64.
Aside: As of the introduction of the x64 products all versions of Windows are cut from the 64/32 bit cross-compiling 'Server 2003 line - including 'Vista. The old 32 bit code base that builds the 32 bit XP product line is effectively a evolutionary dead end.
