Okay, when I save a file in ZBrush 2.0, will I be able to open that same file back up and resume editing the object I saved, or do I have to snapshot it? If I do, then when I do, will the snapshot preserve everything, I.E. the underlying Zsphere Structure, and the lower resolution details?

To be able to edit a model again you need to save the Tool - that's what ZB calls a model - rather than the document. Saving the document simply saves the lights, pixols, colors and materials that are on the canvas. You might want to save the document but it's not necessary if you are working on a model rather than a scene.
Once saved you can load your model again by using the Tool>Load button. Draw the model on the canvas and press the Edit button (hotkey 'T'). You will then be able to continue editing your model as before. If your model is a polymesh you can save it at the lowest subdivision level; all the subdivision levels will be intact and saving at the lowest level saves disk space.

I am slowly learning this.

If you want to keep editing an object, then under the Tools menu, Save As a .ztl file. When you re-open ZBrush, you can load the file as a tool, draw it on the canvas, and start editing.

Resave at frequent intervals is always a good practice.

So if I save a zsphere structure whose preview I have detailed, will it save the preview if I only snapshot the zsphere?

If you have worked on the preview mesh of a zsphere that work will be saved with the zsphere tool - the preview is an integral part of the zsphere structure. Just save the tool as mentioned above and you'll be able to load and continue working with you model at a later ZBrush session. It doesn't matter whether you're in preview or zsphere mode when you do the save.
