Is there a easy way to create gaps , inside a subdivided surface , without before having to freeze it?

There are actually a few ways to get the resuts you are after.
While not the fire and forget type of answer, edge extrude will give you something like that as long as you have an edge running down that section.

You're right but........
What if I do not have any manageable edge to extrude?
(just create it!)
