'select -hi' selects everything beneath the selected node.
'select -all' selects all objects in the scene.

How do mean? Tried it and what it does to me is that it's just puts a key on the selected joint, a shoulder joint for ex, I am newbie at Maya so I might do it all wrong?

That's Mel for Select All and Select Hierarchy. You don't need to use Mel, just use "Select Hierarchy" from the Edit menu up top. It'll select all the children of your current selection, then you can set a key, and all the children will get keyed as well.

Maya character sets are there for this very purpose. --And you can have anything you want in the set, keyframe all or just what you select in the channel box, have sub-sets, all that good stuff.

Give them a go.
