I see the tutorials stickey and I will be looking at those. But I am just getting into
UV mapping and trying to get my head around the concept.

I understand that UV mapping is a way to map a texture image onto the faces of
a model. I want to know if I am understanding this correctly. The UV mapping program
creates an image file with the faces spread out on it. The UV information is stored with
the model that matches up the x,y coords of the image file with the x,y,x coords of the
model. I mean where the vertex are located in the image file.

Is that correct?

So when you edit the UV map by moving the faces around to correct for faces on top
of each other etc, the model u,v info is updated to reflect this?

If this is the case, how do you get all the UV maps for different model parts into one
image file?

Hope this makes sense and if I am incorrect, please educate me.

Is this correct? Yes and No.

The model does hold the UV map information in it. But any changes to the position of the texture, itself, has to be updated manually in the UV Mapping program. The Model will not automatically line up if you do not maintain the original placement of the un wrapped pattern. Luckily, this is easy to do and you similar reload the texture map in the UV Mapping program and tweek the model to it. This is good if you are trying to match a picture of a face to a model.

However, if you are painting everything from scratch, it is easier to space out everything in the UV Editing program before creating the UV Map image.

To split a model into parts to UV Map separately, it depends on the program. Oftentimes, you simply set up shading domains and use that as a means to split you models apart in the texturing stage.

PS: Also, the model doesn't usually contain the image data in the same file. And the image that you point to can be different than the file that is originally created. For example, you can have a texture map for a knight in shiny armor and, without UV Mapping him again, also have a texture map for when he gets dirty.

Thanks for replying, I found the info I was looking for in the stickey.

Are you the awbenson from 3dxtract?
