What would be the best way to create ears on a human model? Extruding? Or, building the ear as a separate mesh then attaching it to the model?

Also, what would be the best way to approach modeling wings for a demonic style creature?

Are their any pre-requisites for the modeling process that I should consider which would keep me out of trouble when it comes time to animate the wings?

Keep in mind that I'm modeling for games....

Maybe there are tutorials I can be directed towards.

1) 'sup to you. I've done it both ways and there's no difference in difficulty or workflow.

2)Extrude the wings from the creature's back, then make them look like wings?

3) Make sure you have enough geometry in the areas which will deform, same as with arms and legs.
