I'm trying to render out an image using IBL. However, I need to create a poly sphere within the IBL sphere maya generates. However, when I create this sphere, it blocks my IBL and doesn't let any light shine through to the object.

How can I get the IBL to light through the poly sphere I'm making?

In the sphere's attribute editor, turn off the render flags you don't need. For example, if you need it to be visible in primary rays, but not in reflections or shadows, then turn off everything but primary rays. You also have options in the Mental Ray section of the shader, to adjust how transparent the surface will appear to the GI.

Where exactly can I turn off the render flags? I think all I want is primary rays, but I can't find it in the attribute editor. All I have is the following:

Common Materials
Special Effects
Matte Opacity
Raytrace Options
Mental Ray
Node Behavior
Hardware Shading
Hardware Texuring
Extra Attributes

Am I going to the wrong place?

BTW, how is Cars turning out? I think to date, Nemo was your best lit show. Is Cars going beyond that?

Not in the shader. Press ctrl-a with the sphere selected for the attr. editor and go down to Render Stats.
