you take your stills of your animation that you rendered out. Put them in a program like premiere or after effects. export with whatever codex you prefer

No, maya only renders uncompressed avi files. No way around it.
VirtualDub is a great freeware encoder :)
get it at http://www.virtualdub.org/
If you want to create a Quicktime movie you have to use one of the commercial applications like Adobe Premiere, Discreet Cleaner ...
