1. how do i make a copy instead of a instance when i duplicate one half of the model?
2. should i be completely done with the texture when i do the duplicate copy?

1. When you use the 'duplicate' tool from the "edit" dropdown menu, there should be extra options available when you instead click the box icon to the right of the button. This will let you set the duplicate to be a copy, instead of an instance.
2. Not completely sure about this one, but if you duplicate the object such that the geometry is mirrored, the texture should be mirrored as well. However, if you're using the texture for a face or something, you'd be much better off waiting to paint the texture 'til after you've put the two pieces together. Otherwise, you'll probably end up with a very visible seam where the textures meet.
