I'm an Character Animator using Maya. Does anyone have any examples/tutorials/links as in how to set up a general lighting scene with 1-3 characters in a medium shot. I've seen some GI examples on the net but they are so slow to render.

I would suggest not using GI if you want a fast lighting set up. Try setting up 3 point lighting for your scene to define your objects. http://www.3drender.com/light/3point.html Jeremy Brin has a excerpt from hsi book on 3 point light on his website.
There are probably some good tutorials somewhere on the net for faking radiosity/GI with just normal lights. You can often place lights behind walls, and floors and have them not cast shadows so they can shine through and illluminate objects. I find it's best to set them to a quadratic decay rate and do isolated renders and tune them to make sure they are giving your objects the appropriate indirect lighting look.
....and use depthmap shadows!

So you want no direct lighting at all - diffuse light only. I'd try it with just one ambient light (with a bit of ambient light shading maybe) and an ambient occlusion pass. That's it ... should render quite fast too.
