sorry i think i don't really understand what you want. :(
you mean that you want to render this lemon with a surrounding white belt?
then just create a simple spline and put it in a lathe nurbs object. then simply assign a white material to it. for the alpha map you gotta enable the alpha image button in the rendersettings(exactly in the save options). i hope i somehow understood you and could help a bit. if not try to explain again. :D

Hmmm... I gather that you want to show the full ring with the lemon still showing up in the rings properties?

Well to do this go to

RENDER -> RENDER SETTINGS

Then go to OPTIONS in the popup and check the ACTIVE OBJECT ONLY box.

After that all you have to do is make sure the ring is selected as your active object in the object manager.

Or you add a RENDER TAG to the lemon and in there deselect the SEEN BY CAMERA option!

if you only use a black background you can make the lemon colorless and specuarless (uncheck all options in the material) and the lemon will not be seen.
If you want to do this with an alpha you will again need the render tag to assign an OBJECT ID. Then in the multi layer options add a layer for whichever ID it is. In PhotoShop this will give you a similar channel to the alpha channel, from which to select the object.

can we change the black from the render window to white but i dont whant any flor or sky i only want to change the color like a seting thing

in the render efects whit the cal renderer i can give the background color any color a like! but i whant to do this and the same time have the realistic efect from the normal render whit aout any efects!!!!!\

Not sure that you can do this. You can change the background colour for the view, but not the render. Simplest way would be to add a SKY object and assign it a material with you desired colour!!!
