Is there a way to bake several textures on an object to a single UV mapped texture?
I have tried with Baker - I have several different textures applied to different polygon selections on a single object. Then I select the texture tags, select Bake texture and have tried different options (bake color, bake composite, bake to UVW tag) but they all end up with an image from the first texture tag and not a "collected" texture.
Is there an easy way to do this that I have overlooked?

I think that is not possible to do in Cinema.
Cinema baking system is very very limited and it needs heaps of improvement. Like bake system, better radiosity baking, batch baking and so on... maybe with the next renderer revision.

Not at home right now so can't look in the manual but can someone give me a brief explanation of what baking does exactly? I think I understand but am not sure. It's a way of .... setting values so they don't get recalculated every frame, right?

I believe baking will take shaders and such and make them bitmap files. Kind of like "flattening" a shader if you will. You could then edit the baked texture.
I think other people want lights and things to bake well in Cinema also. Imagine baking all the lighting in an architectural interior- just let the sucker compute some night. Then if you render out a movie, and the client decides they want the camera to move differently, you can render out new movies lightning fast.
Video game engines often bake light maps and shadow maps to make environments seem more naturally lit, but without a hit in real-time performance.

You find baking option under render menu... But first, make sure that you have UV map on your object!
