Jettobevel is a favorite for me.
UVImaginator for exporting my UV maps.
Delete_Map for deleting weight, texture, or morph maps all at once if desired.

There's a list over at Spinquad on useful modeler plugins:

I propose to go shopping at pictrix. A lot of free plug ins and lscripts.

"Delete_Map" isn't built into the new 8.01. This plugin does it "en masse" (batch deleting).
When ever I come across an idea for a tool that I think would be really useful, I usually make it myself. So my two most used would be:
AlignAxis: http://mapage.noos.fr/samuelLK/Plugins/Plugins.html#AlignAxis (Better version with 1001 TnT, made mostly for non-organic stuff)
WeldPro: http://mapage.noos.fr/samuelLK/Plugins/Plugins.html#WeldPro (welding with symmetry and many other options)
