it is really important to start with some reference material and some time sketching first. ok i dont use maya so no specific tips, but in general you would want to make it with possibly several planes to give the affect of depth. it might be possible to use a displacement map technique to get a general lanscape down, and then fill it with many different objects: trees, barn, fence, animals, anything that adds realism. most likely you will need to spend some time making very little items such as weeds and maybe stones even grass or flowers. the best landscapes i have seen were built like this, i am sure maya offers some of this pre built or as a plug in maybe grass generator of some kind(not too familiar with maya so cant be sure...) either way once you have done all this and finished the appropriate textures/surfaces you will have to make a good light rig to get a truely realistic render.
