Right-click (PC) the Title bar of your document and choose "Image Size" from the menu. Look at the 'dpi' setting near the bottom.

From the task menu at the top click Adjust/Image Size, this will show you the dimensions of the image as well as the DPI, you can change the DPI by just typing in the new value. Depending on what you are doing I wouldn't recommend bumping that number up, it can cause a lot of blurring. Again this just depends on what you're working on.

Actually, if you uncheck "resample image" the image isn't resized at all when you change the DPI or dimensions.

Just a small correction... but the correct term is PPI in photoshop...
You have no control over DPI... it is a characteristic of the print device...

Ya, if youre working in texture maps or whatever, DPI or PPI does not matter. It is strictly a print setting. Maya or 3d programs dont read in DPI, just pixel size.
If you want to feel comfy at working at 72 dpi, then set that in Image > Image Size and set the Resolution to 72, and turn of Resample Image.
