all I have to do are the ears and hair, as you can see the hair is a sculptured bunch of intertwining WEAVS!! curly mother ****a :)

Duplicate, duplicate, duplicate. Make like 5 versions of one hair clump and Duplicate, duplicate, duplicate.
By the way, Modeling a greek sculpture head is an excelent idea

Duplicate is great. Another thing that will help out is try to create a texture that'll give a similiar effect on a circle or cylinder. That way you won't have to model excessive detail and save on render times.
