I know that I could use artisian, but I am looking for a polygon result which I am pretty sure can't be done with artisian. If I am wrong plus let me know, but if there is any tutorials on the old bare tree please let me know.

You can try the poly extrude along path tool which should be quite handy for this

dudder's? poly extrude along path tool doesn't seem to be a maya default tool, but a plug-in. I can't seem to find it in maya 5. I've found a poly bridge tool on highend. Is that what ur refering to? the website is...http://www.sliker.org/flash.html
Poly bridge connects two faces on different objects like they were extruded and merged (possibly the same object as well, never tried that). Its useful but not what you want.
You can extrude along a curve by selecting the face, and selecting the curve, and using the normal extrude operation. You'll need to change component mode obviously but, its pretty easy otherwise.
Then once you do that you can control the taper, subdivisions (and twist?) of the extrusion.

The Artisan certainly is an interesting approach the Lyr mentioned though. I would love to hear more about that. I've used it as a foundation using 1 of the tree brushes then converting it to polygons and going from there, but if there is any addtional advice or info. that I am missing I would certainly appreciate if you would let me know.

basically you want to layout the flow and proportion of your geometry, smooth the mesh and then sculpt with artisan. Artisan takes some getting used to but it's a very solid modeling tool.
