In Faces mode, you can select faces and r-click assign them to a colored group. Being in a group doesnt mean that much. But what does matter is that the faces you want to unwrap in one whole peice are the same color, and that the areas you want to be seperate from that section are a different color. To rephrase that, faces can be of the same color, but as long as they aren't touching, they will be unwrapped seperately, if they are touching and the same color they will be unwrapped as one piece.

At the bottom of that menu, you can select the faces within that colored group.

Finally at the bottom there is a colored group which excludes the faces assigned to it from being unwrapped in that uv operation.

In Edges mode you can mark or unmark edges for cutting. This is important for modifying how a group unwraps. You do not need to mark the edges between colored groups for cutting, this is done automatically. But if there is a compext area and you with it to peel apart in a specific place to remove/ease distortion, then you can cut in that place.

Finally, once you have all the faces assigned to groups, and all the edges you want cut, marked, Click continue. This will give you two options for unwrapping. Play around with them. Find the one that suits what you are trying to do best.

Also, in faces mode, you can select a set of faces, and click UV mapping like in object mode, and the uv editing window will open up, with only the selected faces marked for editing (all the other faces are assigned to the exclude from unwrapping group). As far as I can tell, one you have unwrapped a model, this is the only way to get back into the uv editor mode, in object mode it will just boot you into the 2d uv editor window.
