Maybe you think I'm stupid but I don't manage to model an infinity sign (the lying 8, you know...). Could anybody please tell me how to do it. I'm gettin' weird!!!

Well i'm a newbie, but i guess i would create the side outline using curves and then extrude it to give it the depth or loft a circle using the outline as path. I guess it depends if you want a round or more linear cross section.

just make a circle spline and move the 2 vertices in the middle

Why not type "8" and rotate it.....

And it doesn't look really good... because in the most fonts 8 isn't symmetric...

if its cheating, so what?
the final product is what matters, if its for a game, then the polycount, if its for a render, the look, it doesnt really matter how you got to it imo, as long as it looks great.
