how do you bake an entire skelaton easily in LW /???

You can bake in the graph editor by selecting the channels you wish to bake and hit the b key.
You can also use the motion baker plugin in the motion panel for bones that have IK. DStorm also has an IK Baker plugin thats free.

Graph editor expressions cant reference channels that are controlled via IK. The expressions in the motion panel can. If you bake the motions onto the bones and remove the IK then GE expressions can now reference those channels.
Also someone may use IK to quickly place the arms etc on the upper body while animating. To get nice overlapping motions the movement needs to start from the shoulder then propogate down thru the elbow, wrist etc.
In this case its easier sometimes as I said, to quickly block out motion with IK then bake and tweak with FK. :)
