Heads up -
for those of you who have been waiting for this, MIRAI is officially coming back! - www.izware.com is up and running, and I suppose (...) they will have a demo soon...
For those who don;t know, Mirai is THE reference in 3d modelling ( that pesky n-gon term... well MIRAI is THE reference) - and a lot more!

thos are the best to you can find, ones that showyou the workflow and not the tools. concept and practice rather then following blindly. I know many modelers whoare greatful of the modeling timelapse videos of Martin, Bay, Logan and and the likes, they truly are the best way to leanr to model, and they require that one leanrs the tools and understand the tools. you say its too fast to understand whats going on and being used, but if you know tools well you should be able to sit and watcha nd know exactly waht tools are being used. Granted mirais tools do not match those in cinema identically.

And they were never meant as tutorials themselves but as modeling timelapse videos. they show an entire model made from scratch in under an hour, usually less then half an hour, thus covering far more then any tutorial ever does. and your not seeings steps, your seeing everything, you know nothing is missed and you see it froms tart to end so your guaranteed it truly works.

You can go to spiraloid and download Bay's "Afternoon with Mirai" which started the call for whole timelapse thing, and some of his other gif animation timelapse which followed. I think that a Gollum timelapse is available on the LOTR Two Towers Special Edition version(The boxset with the Gollum figure).
