I've only ever rigged eyes that were actually spherical geometry, but my client has a character whose eyes are simply textured planes. I need to rig up a way to have these textures follow a look-at controller. Any ideas?

Try using a projection map instead of UV's (`normal` setting) for the eye texture. This way you can move the pivot point of the place3dTexture node to the center of the eye and set the aim constraint up to rotate it.
This somtimes works well with defored sphere eyes as well, because it can lead to less texture stretching, depending on the eye shape.
