I tried doing it in PS7 but didnt seem to work. Can you nest Layer Sets in Photoshop CS? If not, does anyone think this might be a useful feature?

Yup... you can nest multiple layer sets actually. That info is on the new features list at Adobe.

And yes... it's a very useful new feature... so i've heard.
