even if i like nurbs the most to modell everything i must say that subds are the better one for this. reason might be that if you modell by nurbspatches skinning and weighting might be anightmare. even if you do it by a wrap deformer. stitch works well for most situations but in some positions the edges might break up and it's hard to correct this. most of the time you have to do this in compositing.
so definitly subds my opinion. a real help for this might be to modell every little detail in the poly proxy. this will make the weighting easier for you.
