Just wanted to reply:'Fraps' but it's for stills. Fraps is great for games but I don't think it works in anything other then a game.

Assuming you are using Windows, why not just use Print Screen to grab the whole screen or Alt-Print Screen to grab a single window? You then just paste the image into your image editor of choice.

I use Snagit http://www.techsmith.com/products/snagit/tour.asp which allows you to grab a portion of the screen that you are interested in.
For movies i.e tutorials you are planning to use to show someone else how to do something within an app I use Camtasia http://www.techsmith.com/products/studio/tour.asp
