CGTalk - modeling cloth

I'm trying to model cloth...but...it doesn't look like cloth :)

Anybody knows a good way how to model cloth (with polys) ?

Second question, does anybody know how the cloth of knights looked??

Here is the pic of a model I'm currently working, I want to make his trowsers and his "jacket"
